COVER COOKIES
Rolled Sugar Cookies
Recipe courtesy of City Place Food & Co.
Makes about 4 dozen cookies
Ingredients:
1 1/2 cups (12 oz.) butter, softened
2 cups granulated sugar
4 eggs
1 tsp pure vanilla extract
5 cups all-purpose flour
2 tsp baking powder
1 tsp salt
Directions:
- In the bowl of an electric mixer, cream together butter and sugar, using the paddle attachment, until smooth. Beat in eggs, one at a time, and then add the vanilla. Mix in the flour, baking powder and salt. Remove the dough from the bowl and shape into a disc. Cover with plastic wrap and chill dough for at least 1 hour.
- Preheat oven to 400 F. Roll out dough on floured surface to 1/2 inch thick. Cut out shapes using cookie cutters. Place cookies 1 inch apart on parchment lined cookie sheets.
- Bake for 6 to 8 minutes in a preheated oven, until slightly browned around the edges. Let cool completely before decorating.
Royal Icing:
Ingredients:
2 egg whites
2 tsp lemon juice
4 cups powdered sugar
Directions:
- In the bowl of an electric mixer, mix together egg whites and lemon juice using the paddle attachment. Once combined, add the powdered sugar and mix on low until the sugar is incorporated into the egg white mixture. Turn the speed up to medium-high and mix for about 5 minutes until the icing appears to be fluffy.
- Use icing immediately or place a damp towel over top of the bowl. If the icing is exposed to air, it will dry up and become too hard to use.

When Kenny and I had the idea placed on our hearts it wasn’t the question of, “should we,” but “how can we?” Prayer was first and the rest came from so many who had willing and open hearts. People need to know the impact of giving and supporting those in your community who otherwise may never see an act of true kindness. I am hopeful with this project that other rental property owners will consider opening one of their homes to a family in desperate need. Thank you all from the very bottom of our hearts, you humbled us and showed us a greatness of love that we didn’t know possible.
